Vegetable rice / Pulav
(Indian Rice recipe)

Vegetable rice
ingredients

2 cups basmati rice

3 cups water
-
3 tsp ginger garlic
paste

5 green chillies
-
1 onion chopped (vertical
chop)

1 tomato diced
-
1 cinnamon small
stick
-
2 cardamom
-
2 clove
-
1 bay leaf
-
10 cashew nuts
-
1 cup coconut milk
-
6 tsp ghee
-
1 cup carrot & beans chopped
-
1/2 cup green peas
-
10 coriander leaves
-
10 mint leaves
Vegetable rice
preparation

Heat the pressure cooker with ghee.

Then add cashew nuts, cinnamon, cardamom, clove and
bay leaf.

Sauté for few mins. Then add onions. Fry until it
turn golden brown.

Next add tomatoes, ginger garlic paste and green
chillies.

Sauté until the raw smell disappears.

Then add carrots, beans and peas. Combine
well.

Then add rice, coconut milk, water, coriander
leaves and mint leaves.

Close the pressure cooker. Now pressure cook for 2
whistles and switch off the stove.

Now your mixed vegetable rice is ready. Serve hot
with onion raitha.
