Vangi bath recipe

(South indian variety rice recipe)

Vangi bath ingredients:

  • 1 cup rice (cooked)  
  • 4 small brinjals   
  • 2 tbsp vangi bath powder  
  • 1 tsp chana dhal  
  • few curry leaves  
  • 1 tsp lemon juice  
  • 1 tbsp oil  
  • salt to taste

Vangi bath preparation:

  • Heat a pan with oil and add curry leaves and chana dhal.  
  • When they turn into golden brown colour add sliced brinjals and little amount of salt. 
  • Close with a lid and cook on low flame untill they become tender. 
  • Add 1-2 tbsp of vangi bath powder and required quantity of salt. 
  • Saute for 3-5 mins. 
  • Remove from flame and keep aside. 
  • Spread the cooked rice in a large plate.  
  • Add vangi bath mixture and lemon juice. 
  • Combine gently and adjust the salt. 
  • Now vangi bath is ready to serve. 
  • Serve with potato chips, papad or any other side dish of your choice.
