Vegetable Upma Recipe

Upma Ingredients:
  • 1 cup rava                            
  • 1 onion (lengthwise chopped) 
  • 1 cup vegetables (carrot, beans, peas) 
  • 3 green chillies              
  • 1" ginger (minced)         
  • 3 tbsp oil                       
  • 2 cups water        
  • Salt to taste 
  • 2 tsp ghee 
  • 1/2 tbsp of oil 
  • few coriander leaves(chopped)

Seasoning Ingredients:
  • 1 tsp mustard seeds 
  • 1 tsp urad dal          
  • 1 tsp chana dal              
  • few curry leaves            
  • 10 cashew nuts

Upma preparation:

 

  • Take a kadai and dry roast the rava till golden brown colour. 
  • Remove from heat and keep it aside. 
  • Heat a vessel with ghee. 
  • Add mustard seeds. 
  • When they start to crackle add urad dal, chana dal, cashew nuts and curry leaves. 
  • Saut'e till they turn into golden yellow colour. 
  • Add curry leaves, onion, vegetables,green chillies and minced ginger. 
  • Add salt and close with a lid. 
  • Cook on low medium flame and in-between stir well. 
  • Cook till the vegetables become tender. 
  • Now add 2 cups of water and close with a lid. 
  • When the water starts to boiling add rava and keep stirring for 2 mins. (Add rava slowly in continuous flow while stirring). 
  • Again close with a lid and cook for 5 mins. 
  • Finally add 2 tsp of ghee and garnish with coriander leaves. 
  • Now rava upma is ready to eat. 
  • Serve hot with coconut chutney or mango pickle.
