Spinach vada (Keera vadai)

Spinach vada ingredients:

  • 2 cups chana dhal
  • 1 cup spinach, finely chopped
  • 1/2" fresh ginger root, minced
  • 2 green chillies, finely chopped
  • 1 tsp fennel seeds
  • 2 red chillies or to taste
  • 1/2 tbsp coriander seeds
  • 1 onion, finely chopped
  • few curry leaves, finely chopped
  • few coriander leaves, finely chopped
  • salt to taste
  • oil for deep fry

Keera vadai preparation:

  • Clean, wash and soak the dhal for 2-4 hrs.
  • Grind the dhal with red chillies, coriander seeds, fennel seeds, ginger and salt.
  • Grind coarsely without adding any water.
  • Add chopped spinac, onions, coriander leaves, curry leaves and adjust salt.
  • Heat a deep pan with oil.
  • Taka a lemon size dhal mixture and flatten it with your palms.
  • Slowly drop the flattened chana dhal mixture into oil and deep fry untill it turns into golden brown colour.
  • Drain excess oil and serve warm.
  • Serve with tomato sauce or ketchup.
