Spinach fry (keerai
poriyal/thotakoora vepudu)
ingredients:
- 1 bunch spinach
- 1/2 cup toor dal
- 1-2 red chillies, broken into half
- 2 garlic flakes, roughly crushed
- a pinch of turmeric powder
- 1/2 tsp urad dal
- 1/2 tbsp oil
- salt to taste
Spinach stir fry with
dal preparation:
- Clean, wash and chop the spinach and keep aside.
- Cook toor dal with required amount of water.
- Make sure that the dal is not cooked too soft or
mushy.
- Now heat a pan with oil and add urad dal and crushed
garlic flakes.
- Saute till they turn into ligft golden yellow
colour.
- Add broken red chillies and turmeric powder and saute
for a min.
- Add chopped spinach and required quantity of salt.
- Mix well and close with a lid.
- Cook on low flame for 5-8 mins or till the spinach
become tender.
- Then add cooked toor dal and cook for another 2
mins.
- Finally adjust salt and remove from flame.
- Serve hot with sambar, Rasam, curd, etc...

cooking time: 10-15mins
