Spinach fry (keerai poriyal/thotakoora vepudu)

Spinach fry (keerai poriyal/thotakoora vepudu) ingredients:

  • 1 bunch spinach
  • 1/2 cup toor dal
  • 1-2 red chillies, broken into half
  • 2 garlic flakes, roughly crushed
  • a pinch of turmeric powder
  • 1/2 tsp urad dal
  • 1/2 tbsp oil
  • salt to taste

Spinach stir fry with dal preparation:

  • Clean, wash and chop the spinach and keep aside.
  • Cook toor dal with required amount of water.
  • Make sure that the dal is not cooked too soft or mushy.
  • Now heat a pan with oil and add urad dal and crushed garlic flakes.
  • Saute till they turn into ligft golden yellow colour.
  • Add broken red chillies and turmeric powder and saute for a min.
  • Add chopped spinach and required quantity of salt.
  • Mix well and close with a lid.
  • Cook on low flame for 5-8 mins or till the spinach become tender.
  • Then add cooked toor dal and cook for another 2 mins.
  • Finally adjust salt and remove from flame.
  • Serve hot with sambar, Rasam, curd, etc...

cooking time: 10-15mins
