Masala Dosa

(Indian breakfast recipe)

Dosa Ingredients:  
  • 2 cups boiled rice            
  • 2 cups par boiled rice      
  • 1 cup urad dal                 
  • 1 tsp methi seeds            
  • a pinch of soda bi carbonate 
  • 1½ tsp salt                         
  • oil for sprinkle 
Masala Ingredients:
  • 2 potatoes (boiled, peeled and mashed) 
  • 1 onion (finely chopped) 
  • 2 green chillies (finely chopped) 
  • ¼ tsp Turmeric powder    
  • ½ tsp Mustard seeds         
  • ½ tsp Urad dal                  
  • ½ tsp Channa dal              
  • few Curry leaves            
  • Salt to taste  
  • 1 tbsp Oil                          
  • ½ cup Water

Masala Preparation:
  • Heat the oil and add mustard seeds. 
  • When they start to crackle add urad dal, channa dal and curry leaves.
  • Sauté till they turn into golden yellow colour.
  • Add onions and green chillies.
  • Sauté till the onions become transparent.
  • Add turmeric powder, mashed potatoes, salt and water.
  • Cook 3 to 5 min.
  • Now your masala is ready.
Masala Dosa Preparation:
  • Soak rice and dal separately for 8 hours.
  • Add fenugreek with dal.
  • Grind urad dal and rice smoothly(separetely).
  • Mix together with salt.
  • Leave in room temparature for overnight.
  • Mix gently the batter with required amount of water and a pinch of baking soda.
  • Heat the pan(tawa) and spread a ladle full of batter into circular motion to make thin dosa.
  • Sprinkle a tsp. oil over it.
  • Cook on both sides, if desired.
  • Place a tbsp. masala in the centre and roll.
  • Remove with spatula and serve masala dosi with chutney and sambar.
