Kovakkai varuval or Dondakaya vepudu ingredients:

  • 1/2 kg kovakkai or dondakayalu
  • 1/2 tsp red chilli powder or to taste
  • 1/4 tsp turmeric powder
  • 2 tsp chana dhal powder
  • salt to taste

Seasoning Ingredients:

  • 1/4 tsp mustard seeds
  • 2 garlic flakes (crushed)
  • 1/4 tsp urad dhal
  • few curry leaves
  • 2 tbsp oil

Kovakkai varuval or dondakaya vepudu preparation:

  • Wash and remove the edges of the kovakkai.
  • Vertically cut the dondakaya into four pieces.
  • Heat a pan with oil and add mustard seeds.
  • When they start to pop add urad dhal, crushed garlic and curry leaves.
  • Add sliced tindora(kovakkai), turmeric powder and salt.
  • Mix well and close with a lid and cook on low flame till the vegetable become tender (In-between stir well. so that they don't burn).
  • Add chilli powder and adjust salt and saute for few more mins.
  • Finally add channa dhal powder, combine weel and cook for few more mins.
  • Koavkkai varuval is ready to serve.
  • Serve with sambar rice, rasam rice, etc...

Chana dhal powder preparation:

  • Dry roast the dhal till they turn into golden brown colour.
  • Allow it to cool for sometime then powder it.
  • Store this powder in an air tight container and use this as required.
