Curry leaves powder
ingredients:
- 1 cup curry leaves
- 1/4 cup urad dhal
- 1/4 cup channa dhal
- 4 red chillies or to taste
- 1 tbsp coriander seeds
- 1/2 tbsp cumin seeds
- 1/4 tsp fenugreek
- 1/2 tsp peppercorns
- 3 garlic flakes
- salt to taste

Curry leaves powder
preparation:
- Heat a pan and add urad dhal and channa dhal.
- Fry them on low heat till they turn golden brown
colour.
- Keep stiring them around continuously.
- Remove from pan and keep aside.
- Now add cumin seeds, coriander seeds, fenugreek,
peppercorns and curry leaves and roast for 3 mins.
- Remove from flame and keep aside.
- Finally add dried curry leaves and and fry for 2 mins
or they turn into crisp.
- Remove from heat and keep aside.
- Allow all the roasted ingredients to cool for 10
mins.
- Grind cumin seeds, coriander seeds, red chillies,
garlic flakes, fenugreek and peppercorns first.
- Then add urad dhal, channa dhal, salt and again grind
coarsely.
- Finally add curry leaves and grind it to
a powder.
- Finally adjust salt and serve with white rice and
ghee.
- Store this powder in an air tight container and use as
required.
- This will keep fresh for months in an air tight
container.
