Coconut rice recipe

(South indian rice recipe)

Coconut rice ingredients:

  • 1 cup rice (cooked)
  • 1/2 cup coconut (shredded)
  • 1 onion (sliced)
  • 2 green chillies or to taste (slit into half)
  • 1/2" fresh ginger root (minced)
  • salt to taste
  • few coriander leaves

Seasoning ingredients:

  • 1/2 tsp mustard seeds
  • 1/2 tsp urad dhal
  • 1/2 tsp chana dhal
  • 2 cardamoms
  • 6 cashewnuts
  • few curry leaves
  • 1/2 tbsp of oil

Coconut rice (tenkaya annam / thengai saadham):

  • Heat a pan with oil and add mustard seeds.
  • When they start to pop add remaining seasoning ingredients.
  • Saute untill they trn into golden brown colour.
  • Add sliced onions, green chillies and fresh coconut grating.
  • Saute till the onions become transparent and the raw smell disappears.
  • Finally add cooked rice, coriander leaves and salt.
  • Mix gently and adjust salt.
  • Coconut rice is ready to serve.
  • Serve with papad, potato chips or spicy potato roast, etc...
