Coconut rice
ingredients:
- 1 cup rice (cooked)
- 1/2 cup coconut (shredded)
- 1 onion (sliced)
- 2 green chillies or to taste (slit into half)
- 1/2" fresh ginger root (minced)
- salt to taste
- few coriander leaves
Seasoning
ingredients:
- 1/2 tsp mustard seeds
- 1/2 tsp urad dhal
- 1/2 tsp chana dhal
- 2 cardamoms
- 6 cashewnuts
- few curry leaves
- 1/2 tbsp of oil

Coconut rice (tenkaya
annam / thengai
saadham):
- Heat a pan with oil and add mustard seeds.
- When they start to pop add remaining seasoning
ingredients.
- Saute untill they trn into golden brown colour.
- Add sliced onions, green chillies and fresh coconut
grating.
- Saute till the onions become transparent and the raw
smell disappears.
- Finally add cooked rice, coriander leaves and
salt.
- Mix gently and adjust salt.
- Coconut rice is ready to serve.
- Serve with papad, potato chips or spicy potato roast,
etc...
