Coconut chicken curry
ingredients:
- 750g chicken
- 1 onion, chopped
- 1 tomato, chopped
- 1 tsp coriander powder
- 1/4 tsp turmeric powder
- 1/2 tsp mustard seeds
- 2 tbsp oil
- salt to taste
- few curry leaves
- few coriander leaves for garnishing
Paste
ingredients:
- 1/4 cup fresh coconut grating
- 1" fresh ginger root
- 4 garlic flakes
- 1/2 tsp peppercorns
- 1 tsp chilli powder or to taste
chicken curry with
coconut preparation:
- Cut the chicken into bite size pieces, wash and drain
the water completely and keep aside.
- Make a paste with paste ingredients and keep
aside.
- Heat a pan with oil and add mustard seeds.
- When they start to pop add curry leaves and chopped
onions.
- Saute till the onions become light golden brown
colour.
- Add chopped tomatoes and saute till they become
juicy.
- Now add ground paste and saute till the raw smell
disappears or till the oil separates from the mixture.
- Add chilli powder, coriander powder, turmeric powder
and salt.
- Mix well and saute for a min.
- Now add washed chicken pieces and once again combine
well.
- Add little quantity of water and cover with a lid.
- Cook on low flame till the chicken pieces become
tender.
- Finally adjust salt and garnish with coriander
leaves.
- Now your easy and tasty coconut chicken curry is ready
to eat.
- Serve with rice, roti, paratha, etc...
