Cauliflower bajji

(South indian snack recipe)

Cauliflower bajji ingredients:

  • medium size cauliflower, cut into florets 
  • 1 cup besan flour
  • 2 tbsp rice flour
  • a pinch of baking soda
  • 3/4 tsp chilli powder or to taste
  • salt to taste
  • oil for deep fry

Gobi bajji preparation:   

  • Mix the flours, chilli powder, baking soda and salt with required quantity of water. 
  • The batter should't be too thick nor too thin.
  • Wash the gobi florets with warm water.
  • Drain the water completely and keep aside. 
  • Now heat a pan with oil. 
  • Dip the cauliflower (gobi) into the batter and slowly leave into the oil. 
  • Deep fry on both sides till they turn into beautiful golden yellow colour. 
  • Remove from heat and drain the oil. 
  • Now your yummy and delicious cauliflower bajji is ready to serve. 
  • Serve hot with chutney, sauce or ketchup.
