Carrot fry (carrot
poriyal/carrot vepudu)
ingredients:
- 500g carrots
- 1 cup toor dal
- a pinch of turmeric powder
- 2 green chillies (slit into half)
- 1 tsp urad dal
- 2 garlic flakes, roughly crushed
- 1/2 tbsp oil
- salt to taste
Carrot fry with toor dal
preparation:
- Wash, peel and cut the carrot into small pieces and
keep aside.
- Cook the dal with required amount of water.
- Make sure that the dal is not cooked too soft or
mushy.
- Heat a pan with oil and add urad dal and crushed garlic
flakes.
- Saute till they turn into light golden yellow
colour.
- Add green chillies and a pinch of turmeric powder.
- Saute for few seconds and then immediately add chopped
carrot and salt.
- Mix well and cover with a lid and cook on low flame
till the the carrot become tender.
- In between stir well so that, they don't burn.
- Add cooked toor dal and once again mix well.
- Cook for further 2-3 mins and adjust salt.
- Remove from heat and finaly your easy, tasty and
healthy carrot fry is ready to serve.
- Serve hot with spicy and tangy curry, rasam, curd,
etc...
