Carrot fry (carrot poriyal/carrot vepudu) ingredients:

  • 500g carrots
  • 1 cup toor dal
  • a pinch of turmeric powder
  • 2 green chillies (slit into half)
  • 1 tsp urad dal
  • 2 garlic flakes, roughly crushed
  • 1/2 tbsp oil
  • salt to taste

Carrot fry with toor dal preparation:

  • Wash, peel and cut the carrot into small pieces and keep aside.
  • Cook the dal with required amount of water.
  • Make sure that the dal is not cooked too soft or mushy.
  • Heat a pan with oil and add urad dal and crushed garlic flakes.
  • Saute till they turn into light golden yellow colour.
  • Add green chillies and a pinch of turmeric powder.
  • Saute for few seconds and then immediately add chopped carrot and salt.
  • Mix well and cover with a lid and cook on low flame till the the carrot become tender.
  • In between stir well so that, they don't burn.
  • Add cooked toor dal and once again mix well.
  • Cook for further 2-3 mins and adjust salt.
  • Remove from heat and finaly your easy, tasty and healthy carrot fry is ready to serve.
  • Serve hot with spicy and tangy curry, rasam, curd, etc...

cooking time: 10-15mins
