Adai recipe (Dosa made with dhals)

Adai ingredients:

  • 1 cup raw rice
  • 1 cup boiled rice
  • 1 cup toor dhal
  • 1 cup urad dhal
  • 1 cup channa dhal
  • 10 red chillies or to taste
  • a pinch of asafoetida
  • 1 onion finely chopped
  • few curry leaves
  • few coriander leaves
  • salt to taste
  • oil for sprinkle

Adai preparation:

  • Clean, wash and soak the rice and dhals together for atleast 4 hours. 
  • Grind the soaked rice and dhal in a mixer grinder along with red chillies, asafoetida, salt and little amount of water. 
  • Grind till the batter turns into smooth paste. 
  • Once the batter is ready then transfer into a large vessel and add chopped onions, chopped curry leaves, chopped coriander leaves and mix well. 
  • Now heat a pan(tawa) and pour a laddle full of the above batter and spread like a uthappam. 
  • Pour a spoon full of oil around the adai. 
  • Cook on medium flame untill it turns into golden brown colour on both sides. 
  • Remove from flame and serve hot with avial or coconut chutney.
