Sambar powder
ingredients:
- 4 cups red chillies
- 11/2 cup coriander seeds
- 1 tbsp channa dhal
- 1 tbsp urad dhal
- 1 tbsp mustard seeds
- 1 tbsp cumin seeds
- 1 tbsp peppercorns (optional)
- 1/2 tsp methi seeds
- 1/2 cup curry leaves
- 1 tsp asafoetida
Sambar powder
preparation:
- Heat a pan and add channa dhal.
- Dry roast on low flame till they turn into light golden
yellow colour.
- Remove from flame and keep aside.
- Next add urad dhal and dry roast on low flame till they
turn into light golden yellow colour.
- Remove from flame and keep aside.
- Then add cumin seeds, coriander seeds and red
chillies.
- Dry roast on low flame for 3 mins.
- Remove from flame and keep aside.
- Then add mustards, fenugreek seeds and
peppercorns.
- Dry roast on low flame for few seconds.
- Remove from flame and keep aside.
- Finally add dried curry leaves and roast them for 2
mins or they turn into crisp.
- Remove from pan and keep it aside.
- Allow them to cool for 10-15 mins.
- Then grind cumin seeds, coriander seeds, red chillies,
mustard seeds, fenugreek seeds and peppercorns first.
- Next add channa dhal, urad dhal,
asafoetida and curry leaves and again grind to a fine
powder.
- Allow this powder to cool.
- Then store this in an air tight container.
- Use this powder as required.
Note:
- All
ingredients should be cool before
grinding.
- The powder
should be cool before storing.
- This will
keep fresh for months in an air tight
container.
