Chicken Vindaloo
Ingredients:
- 500g
chicken (cut into small pieces)
- 1
onion (finely sliced)
- 2
green chillies (slit into half)
- 1
tbsp tamarind pulp
- 1
tsp vinegar
- 1
tsp sugar
- 2
bay leaf
- 2
cardamoms
- 2
tbsp oil
Marinate
Ingredients:
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 3 red chillies or to taste
- ½ tsp mustard seeds
- ½ tsp peppercorns
- 2 cloves
- 1" cinnamon stick
Paste
Ingredients:
- 1" ginger piece
- 4 garlic flakes
- ½ tsp turmeric powder

Chicken Vindaloo
Preparation:
- Dry roast all the marinade ingredients till
you get a nice aroma.
- Make a paste with paste ingredients and
roasted marinade ingredients.
- Rub the paste with chicken
pieces.
- Allow it to marinate for 2
hours.
- Heat a pan with oil and add bay leaf,
cardamom and sauté for few sec.
- Add onions and roast till they turn into
golden yellow colour.
- Now add green chillies, salt
and marinated chicken pieces and roast on medium
flame till they turn into light brown
colour.
- Add 2-3 cups of water and close with a lid
and cook on low flame till the chicken pieces are
completely tenderised.
- Then add tamarind pulp, vinegar, sugar and
cook for few more mins.
- Finally garnish with coriander leaves and
serve with rice, paratha or naan.
Prep.time&cooking time: 2-2.5 hrs
